This Kothavarangai Paruppu Usili / Cluster Beans Paruppu Usili recipe is a traditional South Indian side dish. It is a lightly seasoned dry curry using a combination of crumbled lentils with cluster beans.

I am not a great fan of cluster beans due to the slight bitter taste that they have. But the exception is when I prepare this cluster beans paruppu usili. T

he lentils seem to slightly mask the bitterness of cluster bean and makes it tasty. This dish is so simple to make and healthy too as the lentils are only steam cooked and then lightly seasoned.

As for nutrition, cluster beans are low calorie vegetables and are rich in vitamin C, vitamin K, iron and dietary fiber. Chana dal is a good source of proteins and high in fiber.

Kothavarangai Paruppu Usili recipe

A traditional South Indian side dish recipe using crumbled lentils with cluster beans.

Ingredients

  • 1 cup chopped kothavarangai ( cluster beans )
  • 1/4 cup chana dal ( kadalai paruppu / split bengal gram dal )
  • 1/4 tsp turmeric powder
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • 2 dry red chillies
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Wash the chana dal and soak it enough water for an hour.
  2. Meanwhile trim the ends of cluster beans and chop into small pieces.
  3. Boil the cluster beans in enough water along with salt till they turn soft. Then drain the water and set the cluster beans aside.
  4. Grind the soaked chana dal along with dry red chillies and salt to a coarse paste without adding water.
  5. Spread this chana dal paste on a plate and steam this for 10 minutes or till a knife inserted comes out clean.
  6. Once the chana dal mixture cools down, crumble it with your hands.
  7. Heat oil in a pan. Add mustard seeds and when they splutter add the curry leaves and saute for a couple of seconds.
  8. Then add the crumbled chana dal along with the cooked cluster beans and turmeric powder.
  9. Mix well and let this cook on a low flame for 4-5 minutes stirring occasionally and then remove from heat.
  10. Kothavarangai paruppu usili is ready to be served.
