Potato Thoran Kerala Style

Potato Thoran recipe – a simple Kerala style potato stir fry recipe. This South Indian recipe has potatoes stir-fried with coconut and spices.

Thoran which is a vegetable stir fry flavored with coconut is one of the most popular dishes in Kerala.

One of my favorite thoran varieties is beetroot thoran.

This potato thoran is another easy to make thoran recipe and can be served with rice or rotis. You need just a few everyday spices and coconut to make this vegetable stir fry. Coconut lends a nice flavor to this potato fry.

Doesn’t it happen quite often that you exhaust all the veggies and are left only with just onions and potatoes in your pantry? Well this happens most of the time for me. Finally I end up making a simple potato fry. But this time I had some grated coconut left which I had stored a couple of days earlier and wanted to finish it off. So that’s how I finally landed up trying this potato thoran.

This potato thoran is a nice variation to the regular potato fry. Coconut and a few regular spices give a nice flavor to potatoes. I prepared this stir fry for lunch to go with rice. Lets move on to the recipe for easy potato thoran.

How to make Potato Thoran step by step

  1. Heat oil in a pan. Add mustard seeds and when they splutter, add urad dal and red chillies. Then add onions.

  2. Fry till onions turn soft. Add green chillies, curry leaves and ginger and saute for a minute.

  3. Add turmeric powder and salt. Then add boiled and cubed potatoes.

  4. Mix well and fry for 4-5 minutes on a medium-low flame.

  5. Finally add the grated coconut and mix. Stir fry for 2 minutes and remove from heat.

  6. Potato thoran is ready to be served.

Ingredients

  • 2 medium-sized potatoes ( urulaikizhangu )
  • 1 onion small
  • 1-2 green chillies
  • 1/2 tsp finely chopped ginger
  • 3 tbsp grated coconut ( thengai )
  • 1/4 tsp turmeric powder
  • 1/4 tsp mustard seeds
  • 1 dry red chilli, broken
  • 1/4 tsp split urad dal (or black gram without skin)
  • A sprig of curry leaves
  • 2 tsp oil
  • Salt to taste

Instructions

  1. Boil the potatoes with skin in enough water. Once they cool down, remove the skin of boiled potatoes. Cut the potatoes into bite-sized cubes.
  2. Finely chop the onion and ginger and slit the green chillies lengthwise.
  3. Heat oil in a non-stick pan and add mustard seeds. Once mustard seeds splutter, add urad dal and dry red chillies.
  4. When dal turns brown, add finely chopped onions and fry till onions turn soft and translucent.
  5. Then add the slit green chillies, chopped ginger and curry leaves and saute for a minute.
  6. Add turmeric powder and salt. Also, add the boiled potato cubes and stir.
  7. Cook the potatoes for 4-5 minutes on a medium-low flame, stirring at regular intervals.
  8. Finally add the grated coconut and mix well. Stir fry for 2 minutes and remove from heat.
  9. Potato thoran is ready to be served.

Notes

  • Substitute shallots for onions.
  • Crush fresh ginger into a paste instead of finely chopping it.
  • You could pressure cook the whole potatoes in enough water for 2-3 whistles instead of boiling them.
