Eggless Mango Muffins

Eggless mango muffins are delicious mango muffins that have no eggs, no butter or oil. Mangoes are still in season and I had to bake with these king of fruits.

So here I prepared eggless butterless muffins with yogurt that to my surprise turned out really soft.

What I like about this muffin recipe is that there is no oil or butter used.

Eggless Mango Muffins recipe

Easy mango muffins recipe that is egg-less and without the addition of butter or oil

Ingredients

  • 1 cup + 2 tbsp all-purpose flour
  • 1/4 cup yogurt
  • 1/2 cup mashed ripe mango
  • 1/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1/4 cup mashed banana

Instructions

  1. Preheat oven to 190 deg C.
  2. Grease a muffin tin or line with paper cup liners.
  3. In a large bowl, stir together all-purpose flour, sugar, baking powder and baking soda.Make a well in the center.
  4. In another bowl, whisk together the mashed mango, milk, vanilla extract, yogurt and mashed banana.
  5. Pour this mixture into the well. Stir until just moistened.
  6. Spoon batter into prepared muffin cups and baked for around 20 minutes or until a toothpick inserted in a muffin comes out clean.
  7. Let the muffins cool in the pan for a few minutes.
  8. Then remove from muffin tins and let them cool on a wire rack.
