Eggless mango muffins are delicious mango muffins that have no eggs, no butter or oil. Mangoes are still in season and I had to bake with these king of fruits.
So here I prepared eggless butterless muffins with yogurt that to my surprise turned out really soft.
What I like about this muffin recipe is that there is no oil or butter used.

- 1 cup + 2 tbsp all-purpose flour
- 1/4 cup yogurt
- 1/2 cup mashed ripe mango
- 1/4 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1/4 cup mashed banana
Instructions
- Preheat oven to 190 deg C.
- Grease a muffin tin or line with paper cup liners.
- In a large bowl, stir together all-purpose flour, sugar, baking powder and baking soda.Make a well in the center.
- In another bowl, whisk together the mashed mango, milk, vanilla extract, yogurt and mashed banana.
- Pour this mixture into the well. Stir until just moistened.
- Spoon batter into prepared muffin cups and baked for around 20 minutes or until a toothpick inserted in a muffin comes out clean.
- Let the muffins cool in the pan for a few minutes.
- Then remove from muffin tins and let them cool on a wire rack.
