Carrot Uttapam

Uttapam / uthappam is a thicker version of dosas and is usually prepared with various toppings and can be called as a South Indian savory pancake. It is a simple South Indian breakfast recipe that is usually prepared for breakfast or as an evening snack.

Carrot uttapam is one version of uttapam, with grated carrots and onions used as the topping. Uttapam is generally prepared with leftover dosa or idli batter.

Once you have the idli batter, you can prepare soft idlis the first day and for the next two days, you could prepare crispy dosas, but after that, the batter turns sour. So the next best thing to prepare is this simple and quick colorful carrot uttapam – a healthy way to add in vegetables for kids.

Ingredients

  • 3 cups dosa / idli batter
  • 1 onion, small, finely sliced
  • 1/2 cup grated carrots
  • 2 green chillies, finely chopped
  • 1.5 tbsp chopped coriander leaves
  • Salt to taste

Instructions

  1. Heat a tawa or skillet.
  2. Chop the vegetables and keep aside.
  3. Spread a ladle of batter on the hot tawa, a bit thick in size.
  4. Sprinkle the vegetables on the batter.
  5. Drizzle 1 tsp oil on the sides of the uttapam and let this cook on medium heat.
  6. Once the uttapam turns golden-brown on the underside, flip it over.
  7. Again drizzle half a tsp oil on the sides and let this cook.
  8. Once the uttapam is cooked, remove and serve hot with coconut chutney, spicy tomato chutney or sambar.

Notes

  • Alternatively, you could mix the vegetables in the batter and then prepare the uttapam.
