Moong sprouts sandwich recipe is a healthy and delicious sandwich. I have used moong sprouts and paneer to make the filling for the sandwich. Sprouted moong beans are rich in protein and low in calories.
I usually prepare moong sprouts stir fry and moong sprouts salad whenever I have sprouts available with me.

A healthy breakfast sandwich recipe using mung bean sprouts.
Ingredients
- 8 bread slices
- 1 cup green moong sprouts
- 3/4 cup crumbled paneer ( cottage cheese )
- 1 onion
- 1 tomato
- 1/2 cup chopped green capsicum ( bell pepper )
- 1/2 tsp ginger paste
- 1 tsp coriander powder
- 1/2 tsp red chilli powder
- 1/4 tsp garam masala powder
- 1/2 tsp cumin / jeera powder
- Salt to taste
Instructions
- Finely chop onions and tomatoes. Chop capsicum into small cubes.
- Heat 2 tsp oil in a pan. Add chopped onions and ginger paste.
- Saute till onions turn translucent.
- Then add chopped capsicum and fry for 2 minutes.
- Add chopped tomatoes along with salt, red chilli powder, cumin powder, coriander powder and garam masala powder and mix well.
- Let this cook for 2 minutes. Add crumbled paneer and mix well and fry for a minute.
- Finally add moong sprouts and mix well. Fry for a couple of minutes.
- Remove from heat and keep aside.
- Apply butter on the bread slices and toast them on a tava / griddle.
- Spread a generous portion of the filling on a toasted bread slice.
- Cover with another bread slice and repeat for all other slices.
- Moong sprouts sandwich is ready to be served!
