A quick Indian breakfast recipe using flattened rice.
Ingredients
- 1 1/2 cups thick poha / aval / beaten rice
- 1 onion
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/4 tsp mustard seeds
- 1/2 tsp broken urad dal
- A few curry leaves
- A few peanuts
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Wash poha and soak it in water for about 10 minutes.
- Heat 1 tbsp oil in a pan. Add mustard seeds and urad dal.
- When mustard crackles, add peanuts and fry for a few minutes.
- Add chopped onions and curry leaves.
- When onions turn soft, add turmeric powder, red chilli powder, salt and poha.
- Fry for a few minutes only till everything gets mixed well.
- Garnish with chopped coriander leaves and serve poha upma hot.
Notes
- As a variation, you could used green chillies instead of red chilli powder.
- If using thin variety of poha, dont soak it for long, you could just wash it and use it in the recipe.
