A healthy chutney recipe using fresh fenugreek leaves and spices.
Ingredients
- 1 cup methi leaves ( fenugreek leaves / vendhaya keerai )
- 2 tomatoes
- 2 dry red chillies
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1 tsp chana dal
- A few curry leaves
- Salt to taste
Instructions
- Clean and wash methi leaves thoroughly.
- Chop the tomatoes.
- Heat 2 tsp oil in a pan. Add chana dal and fry till dal turns brown.
- Add methi leaves and fry for some time till the leaves wilt.
- Now add the chopped tomatoes and keep frying till the raw smell goes and it becomes mashed.
- Cool this mixture and grind it to a paste adding little water.
- For preparing the seasoning, in a separate pan, heat about 1 tsp oil. Add mustard seeds.
- Once they splutter, add urad dal and curry leaves.
- Once the urad dal turns brown, add this seasoning to the chutney.
- You can dilute the chutney if needed, by adding little water.
- Methi chutney is ready to be served.
