What is a Julienne?

We come across the term Julienne when there is a particular way that a vegetable is cut.

This is actually a French technique in which vegetables are cut into thin long strips. The vegetable resemble matchsticks when cut. You could easily identify it with the potato fries where the potatoes are cut into juliennes.

The technique for cutting this is by first slicing the vegetable to about six to seven centimeters long rectangular stick. This is then cut lengthwise into one to two millimeter thin slices. These slices are then stacked and again cut lengthwise into one to two millimeter thin strips. This way you will be creating thin square sticks like matchsticks. You could apply this technique to many vegetables like potato, carrot and celery.
