Aloo shimla mirch curry is a mildly spiced tomato based curry of potatoes and bell pepper. It is a simple recipe that is a good side dish for chapatis. It goes well with pulao also.
Potatoes and capsicum make for a tasty combination in this curry.
This curry uses only simple ingredients but the taste is absolutely delicious.

A mildly spiced curry of potatoes and bell pepper in a tomato based gravy.
Ingredients
- 3 potatoes ( aloo )
- 2 green capsicums ( bell peppers or shimla mirch )
- 1 large onion
- 3 medium tomatoes
- 4 cloves of garlic
- 1/2 tsp chopped ginger
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1/2 tsp cumin powder
- 1 tbsp coriander powder
- 1/4 tsp garam masala powder
- A few coriander leaves
- 1 tbsp oil
- Salt to taste
Instructions
- Chop onion, ginger and garlic. Chop capsicums into big pieces.
- Blend the tomatoes into a paste.
- Pressure cook or boil the potatoes until soft. Chop them into big cubes.
- Heat oil in a pan. Add chopped onions, ginger and garlic.
- Saute till the onions turn golden brown.
- Now add the chopped capsicums and fry for 2-3 minutes. Remove and keep aside.
- In the same pan, add tomato paste and fry till the raw smell goes.
- Add in salt, turmeric powder, red chilli powder, coriander powder and cumin powder and fry for a minute.
- Add boiled potatoes and the fried capsicum along with a cup of water.
- Let the gravy boil to the desired consistency.
- Finally add garam masala powder just before removing from heat.
- Garnish with chopped coriander leaves.
- Serve aloo shimla mirch curry hot with rotis or naan or any Indian flat bread.
