A South Indian style simple egg curry recipe.
Ingredients
- 4 eggs
- 2 medium-sized onions
- 2 tomatoes
- 4 cloves of garlic
- 1 inch piece ginger
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tbsp coriander powder
- A few coriander leaves
- A few curry leaves
- Salt to taste
Instructions
- Grind the onion, ginger, garlic and curry leaves into a paste.
- Boil the eggs, remove the shells and cut the eggs into halves.
- Grind tomatoes and coriander leaves into a paste.
- Heat 1 tbsp oil oil in a pan. Add onion paste and fry till it turns golden brown.
- Then add the tomato paste along with salt, turmeric powder, red chilli powder and coriander powder.
- Fry till the raw smell of the tomatoes goes.
- Add a cup of water and bring the gravy to a boil.
- Finally add the boiled egg halves and cook for a few minutes till the gravy is of required consistency.
- Garnish with chopped coriander leaves and egg curry is ready to be served.
