Soya chunks curry / meal maker curry recipe – a North Indian style simple soya chunks curry. This recipe has soya chunks in a flavorful gravy. Soya chunks ( meal maker or soya nuggets ) are loaded with protein and have a meat-like texture. When added to curries, they absorb all the flavors of the curry and taste delicious.
This soya chunks curry goes well with chapathis, phulkas, naan, steamed rice or pulao.
The recipe for this soya nuggets curry is very easy. First we need to soak the soya chunks in hot water to soften them and then add them to the gravy which has onions and tomatoes. Curd too is added, which gives the curry a nice creamy texture while the spices give a nice flavor to it.

How to make Soya Chunks Curry step by step
- Firstly, soak soya chunks in hot water for 30 minutes. Then drain the water and squeeze any excess water from soya chunks using your hands and set it aside in a bowl.
- Heat oil in a pan. Add bay leaf and cloves and saute for a few seconds. Then add finely chopped onions.
- Fry till the onions turn golden brown at the edges.
- Meanwhile, take roughly chopped tomatoes in a blender or mixer jar. Add finely chopped ginger and garlic. Grind the tomato mixture to a smooth paste.
- Add this tomato paste to the pan.
- Let it cook for 3 minutes and then add turmeric powder, red chili powder and coriander powder along with salt.
- Fry for a minute. Then add the soaked soya chunks.
- Saute for a minute. Then add whisked yogurt.
- Stir well for a minute on medium heat and then add 1/2 cup water along with crushed kasuri methi.
- Let it come to a boil. Now reduce heat and simmer for around 5 minutes or till the gravy reaches desired consistency. Finally add garam masala powder, stir well and remove from heat. Garnish with finely chopped coriander leaves. Meal maker curry is now ready to be served.

Soya Chunks Curry recipe
Ingredients
- 1/2 cup soya chunks ( meal maker / soya nuggets )
- 1 medium-sized onion
- 2 medium-sized tomatoes
- 1/2 tsp finely chopped garlic
- 1/2 tsp finely chopped ginger
- 1/4 cup curd ( dahi / yogurt / thayir )
- 2 cloves ( laung / lavangam )
- 1 bay leaf ( tej patta / brinji ilai )
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 1/2 tsp coriander powder
- 1/4 tsp garam masala powder
- 1/2 tsp kasuri methi ( dried fenugreek leaves )
- Coriander leaves for garnishing
- 1 tbsp oil
- Salt to taste
Instructions
- Soak soya chunks in hot water for 30 minutes. Then drain the water. Rinse them in running water 2-3 times. Squeeze any excess water from soya chunks using your hands. Set these soya chunks aside in a bowl.
- Meanwhile, peel and finely chop onions. Also, peel and finely chop ginger and garlic.
- Take roughly chopped tomatoes in a blender or mixer jar. Add finely chopped ginger and garlic. Grind the tomato mixture to a smooth paste.
- Heat oil in a kadai or pan. Add bay leaf and cloves and saute for a few seconds. Then add finely chopped onions.
- Saute till the onions turn brown on the edges.
- Now add the ground tomato paste.
- Let it cook on medium heat for 3 minutes and then add turmeric powder, red chili powder and coriander powder along with salt.
- Fry for a minute. Then add the soaked soya chunks.
- Saute for a minute and add whisked curd.
- Stir well for a minute on medium heat and add 1/2 cup water. Also, crush the kasuri methi with your hands and add it.
- Once it come to a boil, reduce heat and simmer for around 5 minutes or till the gravy reaches desired consistency.
- Finally add garam masala powder and stir well. Remove from heat.
- Garnish with finely chopped coriander leaves. Soya curry is now ready to be served with chapathis, rice, phulkas or pulao.
Notes
- After soaking the soya chunks and squeezing out the water from them, if some of the chunks are too big, chop them.
- Whisk the curd and then add it to the curry.
- Adjust chilli powder to taste.
