Soya chunks vegetable kurma is soya chunks / meal maker and mixed vegetables in a coconut based curry. This is flavorful and aromatic curry that can be served with rotis or chapatis and pulao.
I haven’t always been a fan of soya and its only in recent times that I have started liking soya chunks. Soya chunks are texturized vegetable protein that can be a great meat substitute.

A flavorful coconut based curry of soya chunks and vegetables.
Ingredients
- 1 cup soya nuggets ( soya chunks / mealmaker )
- 1.5 cups mixed vegetables, chopped
- 1 onion, large
- 2 tomatoes, medium-sized
- 3 garlic cloves
- 1 tsp ginger paste
- 1/2 cup grated coconut
- 1/4 tsp turmeric powder
- 1 tbsp coriander powder
- 1 1/2 tsp red chilli powder
- 1 tsp cumin seeds ( jeera )
- 3 cloves
- 1 tsp fennel seeds ( sombu )
- 1 inch piece cinnamon
- 2 cardamoms
- A few curry leaves
- 1 tbsp + 1 tsp oil
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Soak soya chunks in hot water for 15 minutes. Drain water from the softened soya chunks. Squeeze out excess water and keep the soya chunks aside.
- I used beans, carrots and potatoes. Chop beans and carrots. Also finely chop onions, tomatoes and garlic. Boil potatoes and cut into bite sized pieces.
- Heat 1 tsp oil in a pan. Add cinnamon and cloves and saute for a few seconds.
- Then add chopped garlic and tomatoes. Fry till tomatoes get completely mashed.
- Remove from heat. Let this mixture cool down and then grind it into a paste.
- Grind grated coconut along with cumin seeds and fennel seeds to a fine paste, by adding water. Keep it aside.
- Heat 1 tbsp oil in a pan. Add cardamoms and curry leaves.
- Saute for a few seconds and add chopped onions. Fry till onions turn golden brown.
- Add ginger paste and saute for a minute.
- Then add chopped beans and carrot and fry it on low flame for around 4 minutes.
- Now add ground tomato paste along with salt, turmeric powder, red chilli powder and coriander powder.
- Fry for 2 minutes. Add the soya chunks along with a cup of water and let the gravy come to a boil.
- Let the gravy cook for 5 more minutes. Then add the ground coconut paste and mix well.
- Cook the curry for 3-4 minutes or till the required consistency is reached.
- Remove from heat and garnish with chopped coriander leaves.
- Serve soya chunks vegetable kurma hot as a side dish for pulao, jeera rice or rotis.
