Spicy vegetable kurma is South Indian style mixed vegetables cooked in a spiced coconut gravy. Kurma is such a versatile dish.

a spicy mixed vegetable curry in a coconut based gravy.

Ingredients

  • 1.5 cups chopped vegetables ( beans, carrots, potatoes )
  • 1 onion, large
  • 1 tomato
  • 1 inch piece ginger
  • 3 cloves of garlic
  • 2 cloves
  • 2 cardamoms
  • 1 inch piece cinnamon
  • 1/2 tsp fennel seeds
  • 1/4 cup grated coconut
  • 1 tsp pepper powder
  • 1 tbsp coriander powder
  • 1/4 tsp turmeric powder
  • 2 tsp red chilli powder
  • Salt to taste

Instructions

  1. Chop onion, ginger and garlic finely. Slice the tomato.
  2. Grind the grated coconut into a fine paste by adding little water.
  3. Heat 1 tbsp oil in a pan. Add cinnamon, cloves and cardamoms and fry for a few seconds.
  4. Then add fennel seeds.
  5. Add the chopped onions, ginger and garlic. Saute till the onions turn brown.
  6. Add turmeric powder, red chilli powder, coriander powder and salt and fry for a few seconds.
  7. Add the chopped vegetables along with 1.5 cups water.
  8. Cook the vegetables till they become tender.
  9. Then add the coconut paste along with the sliced tomatoes.
  10. Let the gravy come to a boil and once the gravy reaches desired consistency, remove from heat
  11. Spicy vegetable kurma is ready to be served hot!
