Spicy vegetable kurma is South Indian style mixed vegetables cooked in a spiced coconut gravy. Kurma is such a versatile dish.
It can be served with rice, chapathis, dosa or idli. This recipe is a spicy version of korma and tastes delicious.

a spicy mixed vegetable curry in a coconut based gravy.
Ingredients
- 1.5 cups chopped vegetables ( beans, carrots, potatoes )
- 1 onion, large
- 1 tomato
- 1 inch piece ginger
- 3 cloves of garlic
- 2 cloves
- 2 cardamoms
- 1 inch piece cinnamon
- 1/2 tsp fennel seeds
- 1/4 cup grated coconut
- 1 tsp pepper powder
- 1 tbsp coriander powder
- 1/4 tsp turmeric powder
- 2 tsp red chilli powder
- Salt to taste
Instructions
- Chop onion, ginger and garlic finely. Slice the tomato.
- Grind the grated coconut into a fine paste by adding little water.
- Heat 1 tbsp oil in a pan. Add cinnamon, cloves and cardamoms and fry for a few seconds.
- Then add fennel seeds.
- Add the chopped onions, ginger and garlic. Saute till the onions turn brown.
- Add turmeric powder, red chilli powder, coriander powder and salt and fry for a few seconds.
- Add the chopped vegetables along with 1.5 cups water.
- Cook the vegetables till they become tender.
- Then add the coconut paste along with the sliced tomatoes.
- Let the gravy come to a boil and once the gravy reaches desired consistency, remove from heat
- Spicy vegetable kurma is ready to be served hot!
