Mutta roast is a Kerala style egg roast recipe. It is usually served for breakfast along with appam or puttu.
But this is also a versatile dish in that it can be served with even with idiyappam, parotta, dosa, chappati or rice.
Its is a simple recipe and tastes yummy.

a simple Kerala style egg roast recipe.
Ingredients
- 3 eggs
- 2 onions large
- 3 tomatoes medium-sized
- 1 tsp finely chopped ginger
- 4 garlic cloves
- 1/2 tsp mustard seeds
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp coriander powder
- 1 tsp garam masala powder
- 1 tsp fennel seeds
- A few curry leaves
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Boil the eggs and remove the shells. Make thin slits on the eggs and keep them aside.
- Slice the onions. Chop garlic finely.
- Make a paste of the tomatoes and keep aside.
- Heat 2 tbsp oil in a pan. Add mustard seeds and when they splutter, add fennel seeds and curry leaves.
- Saute for a couple of seconds. Then add sliced onions, garlic and ginger.
- Fry the onions till they turn golden brown.
- Now add the tomato paste along with salt, turmeric powder, red chilli powder and coriander powder.
- Let this cook on medium flame till the tomatoes are cooked. Add little water if needed.
- Add garam masala powder and mix well.
- Finally add the boiled eggs, mix well and let this cook on slow flame for around 2 minutes.
- Garnish with chopped coriander leaves.
- Mutta roast is ready to be served hot with appam, puttu or parotta.
