Palak paneer bhurji is scrambled cottage cheese with spinach. Love the combination of spinach and paneer.
I had decided on making the dish palak paneer to go with rotis but the lazy me didn’t want to do go through the process of cooking the spinach and then blending it. But I still wanted this nutritious combination in my sabzi.
Finally I settled upon this palak paneer bhurji with my homemade paneer.
It is an easy and quick fix dish that goes well with rotis or chapatis. You could even have it as a side dish for rice. Lets move on to the recipe for easy palak paneer bhurji.
Scrambled Cottage Cheese with Spinach | Palak Paneer Bhurji Recipe
Palak Paneer Bhurji recipe
Ingredients
- 1 cup chopped palak ( spinach leaves )
- 1/2 cup paneer ( crumbled or grated )
- 1 onion medium-sized
- 2 tomatoes medium-sized
- 2 green chillies
- ginger, 1 inch piece
- 2 cloves of garlic
- 1/2 tsp cumin seeds
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1/4 tsp garam masala powder
- A pinch of asafoetida
- A few coriander leaves
- 1 tbsp oil
- Salt to taste
Instructions
- Crumble paneer. I used homemade paneer for this recipe.
- Wash spinach leaves thoroughly and chop finely. Chop onions, ginger, garlic and tomatoes. Slit green chillies.
- Heat oil in a pan. Add cumin seeds and asafoetida. When cumin seeds crackle, add chopped onions, slit green chillies, ginger and garlic.
- Saute till the onions turn light brown. Then add chopped spinach along with little water and cook.
- When the spinach turns soft, add chopped tomatoes along with salt, red chilli powder and coriander powder.
- Fry till the tomatoes are mashed and the raw smell goes.
- Finally add crumbled paneer and fry for about 2 minutes.
- Just before removing from heat, add garam masala and mix well. Garnish with chopped coriander leaves.
- Serve palak paneer bhurji hot with rotis or chapathis.
