Vegetable Mayonnaise Sandwich recipe – a quick and easy sandwich using vegetables and mayo. This recipe has creamy mayo with mixed vegetables. It is easy to make in minutes and is great as a quick snack or breakfast.
It is a great way to add some fresh veggies in our meal, especially for kids.
Usually I prepare sandwiches like potato spinach sandwich that is filling but does need some cooking time. This mayonnaise sandwich doesn’t involve cooking, if you are not toasting the bread and is especially helpful for rushed mornings.
The flavor packed mayo sandwiches are very easy to make. Just chop up some veggies of your choice or what is available at home. Mix it up with mayo and spices to prepare the spread to go on the bread slices. Thats it! your sandwiches are ready in no time. Its a great time-saver when you are in a mad rush in the mornings and want to have a quick breakfast. You can even serve it as a quick snack.
Some variations for the mayo sandwich
- I have added onions, tomato, green capsicum, cabbage and carrot to this sandwich. Other veggies that you can add are red capsicum, purple cabbage or boiled sweet corn.
- I have used black pepper for seasoning. You can use red chilli flakes too.
- Add oregano or dried mixed herbs to the stuffing mixture.

How to make Vegetable Mayonnaise Sandwich step by step
- Firstly for the sandwich filling, take finely chopped onions, tomatoes and capsicum in a bowl.
- Then add finely chopped cabbage.
- Also add grated carrots.
- Now add the mayonnaise as well as the lemon juice.
- Then add ground black pepper. Add red chilli flakes too, if you are using them.

- Mix well. This is the filling for the veg mayo sandwich.
- Finally for assembling the sandwich, apply butter on each side of the bread slice. Spread the mayo stuffing on buttered side and cover with another slice. Alternatively, toast the bread slices. Then spread the mayo filling on a bread slice, cover wtih another and serve.
- Then cut the sandwich into two halves and vegetable mayo sandwich is ready to be served.

Vegetable Mayonnaise Sandwich recipe
Ingredients
- 4 bread slices ( whole wheat / white / multigrain )
- 2 tbsp onion ( finely chopped )
- 2 tbsp carrot ( grated )
- 1 tbsp tomato ( finely chopped )
- 2 1/2 tbsp cabbage ( finely chopped )
- 2 tbsp green capsicum ( finely chopped )
- 3 tbsp mayonnaise
- 1/2 tsp lemon juice
- 1/4 tsp black pepper ( or to taste )
- 1/4 tsp chilli flakes ( optional )
Instructions
Make the filling for Vegetable Mayo Sandwich
- Peel and finely chop the onion.
- Wash and finely chop the tomato and green capsicum.
- Also peel and grate the carrot.
- Wash the cabbage. Cut it into thin strips and then finely chop it.
- Take the chopped onions, tomato, capsicum, cabbage and carrots in a bowl.
- Then add mayonnaise. Also add the lemon juice.
- Finally add the black pepper and red chilli flakes ( if using it ).
- Mix it well. The stuffing for veg mayo sandwich is ready.
Assemble the Vegetable Mayo Sandwich
- If you are not toasting the bread, then apply butter on one side of each of the bread slices.
- Spread a portion of the mayo stuffing on the buttered side.
- Cover it with another bread slice, the buttered side facing downwards.
- Cut the sandwich into two halves. Vegetable mayo Sandwich is ready to be served.
- If you are toasting the bread, apply butter to both the sides of the bread slices and toast them in a tawa or toaster. Spread a portion of the prepared mayo stuffing on one side and cover with another bread slice. Cut the sandwich into two halves. Toasted veg mayo sandwich is ready to be served.
Notes
- There is no need to add salt as mayonnaise usually contains salt.
- I have used store-bought eggless mayonnaise to make the sandwiches.
- Use these veggies or any combination of veggies that you have available. You can use red capsicum or boiled sweet corn too.
