a light soup using tomatoes and fresh basil leaves.
Ingredients
- 2 medium-sized tomatoes
- 1 onion
- 3 garlic cloves
- 1/4 cup chopped basil leaves
- Olive oil
- Salt to taste
Instructions
- Chop the onions, garlic and tomatoes.
- Chop the basil leaves.
- In a pan, heat about 2 tsp olive oil. Add the chopped onions and garlic. Fry till the onions turn turn translucent.
- Then add the chopped tomatoes and fry for a few minutes.
- Add the chopped basil leaves along with some water and let this mixture boil.
- Let the mixture cool.
- Then blend this soup adding the required amount of salt. Then pour this again into the pan and add water if you want a less thicker consistency and boil it.
- Remove and garnish with basil leaves.
- Serve tomato basil soup hot.
