Rice Kheer / chawal ki kheer recipe – a delicious creamy Indian style rice pudding recipe using rice and milk. Rice kheer is one of the most popular Indian desserts that is prepared for any festive occasion.
This sweet rice pudding is flavored with cardamom and sweetened with sugar and made richer with a sprinkling of nuts.
It is a filling dessert that tastes good when either served warm or chilled. I make rice kheer occasionally and sometimes it ends up as a complete meal.
For a quick fix kheer, I end up preparing vermicelli payasam. Payasam is the South Indian name for kheer.

- 1/4 cup rice
- 4 1/2 cups milk
- 1/2 cup sugar
- 8-10 cashew nuts
- 2 cardamom pods ( elaichi )
- 1 tbsp chopped blanched almonds ( badam ( optional ) )
- 1 tsp ghee ( or clarified butter )
- Rinse and soak the rice in enough water for 15 minutes. Then drain the water.
- Bring the milk to a boil in a heavy-bottomed pan or a non-stick pan.
- Lower the flame and add the rice and cardamom pods to the milk. Let this cook on a slow flame till the rice is cooked and the milk has reduced to almost half the quantity. Keep stirring occasionally to ensure the milk does not stick to the bottom of the pan.
- Once the milk has reduced, add sugar. Let this cook for 2 minutes on slow flame and then remove from heat.
- Meanwhile heat ghee in a small pan. Add the cashew nuts and fry till they turn golden brown. Add this to the prepared kheer along with chopped blanched almonds.
- Rice kheer is ready to be served warm. You can also let it cool down and then refrigerate it and served chilled. It tastes good both ways.
- Kheer thickens with time. So if you are planning to serve it later you may need to add some milk to the kheer.
- You can add raisins to the kheer.
