Cauliflower Capsicum Stir Fry | Gobi Shimla Mirch Sabzi

Cauliflower capsicum stir fry / gobi shimla mirch sabzi is a simple and easy North Indian style dry curry recipe using cauliflowers and bell peppers. Cauliflowers and capsicums go well together and this stir fry is so easy and quick to make.

I recently posted capsicum peanut masala curry and loved the flavor of peanuts in the curry. I like the bright colors of capsicums and wanted to incorporate it in this curry.

In this recipe I have used green and red capsicums but you can omit the red capsicums if you don’t have them at hand.

Both cauliflowers and capsicums are great sources of vitamin C. This healthy stir fry can be served with rotis / chapatis or rice and taste delicious. Lets move on to the recipe for cauliflower capsicum stir fry.

Cauliflower Capsicum Stir Fry recipe

a North Indian style easy dry curry of cauliflowers and capsicum.

Ingredients

  • 2 1/2 cups cauliflower florets
  • 1 1/2 cups chopped capsicums ( bell peppers / shimla mirch )
  • 1 onion medium-sized
  • 1/2 inch piece ginger
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp amchur powder ( dry mango powder )
  • 1/2 tsp cumin seeds ( jeera )
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Cut the cauliflower into small florets. Chop the capsicums into cubes.
  2. Finely chop onions and ginger.
  3. Take enough water in a pan and bring it to a boil. Add the cauliflower florets along with turmeric powder and salt and let it cook till cauliflower florets turn soft. Drain the water and set aside.
  4. Heat oil in a pan. Add cumin seeds.
  5. When cumin seeds slightly change color, add the chopped onions and ginger.
  6. Saute till onions turn light brown in color.
  7. Now add the chopped capsicum and fry for a couple of minutes.
  8. Then add the cauliflower florets.
  9. Add salt ( we have already added some salt while cooking the cauliflower florets ), red chilli powder, garam masala powder and amchur powder and mix well.
  10. Let this cook for around 2 minutes, stirring at intervals, till the cauliflower and capsicums and the spices come together.
  11. Cauliflower capsicum stir fry is ready to be served with flat breads or rice.
