Vegetable Biryani

One of the most popular Indian rice dishes is biryani. Think of biryani and the wonderful aroma of spiced rice is brought to your mind. There are many varieties of biryani prepared which include chicken biryani, fish biryani and vegetable biryani.

Each of the main ingredients in these biryanis bring out their own individual flavor and aroma to this dish. I have prepared a simple vegetable biryani here.
This vegetable biryani with loads of vegetables is best served with any raita.

a delicious one pot meal using rice and vegetables with aromatic spices.

Ingredients

  • 1 cup basmati rice
  • 1 large onion
  • 2 tomatoes
  • 1 tbsp ginger-garlic paste
  • 1/2 cup mixed vegetables ( beans, carrot, cauliflower )
  • 2 green chillies
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 2 cloves
  • 1 bay leaf
  • 2 cardamoms
  • 1 inch piece cinnamon
  • A few coriander leaves
  • Handful of mint leaves
  • A few cashew nuts
  • Salt to taste

Instructions

  1. Wash the basmati rice 3-4 times and then soak the rice in enough water for 15 minutes.
  2. In a pressure cooker, heat 2 tbsp oil.
  3. Add the whole garam masala – cloves, cinnamon, bay leaf and cardamoms. Fry for a few minutes.
  4. Now add sliced onions, ginger-garlic paste and sliced green chillies.
  5. Fry till the onions turn golden brown.
  6. The chopped tomatoes can now be added along with salt, turmeric powder, red chilli powder and coriander powder.
  7. Fry the tomatoes for a few minutes.
  8. Add the vegetables along with mint leaves and fry for a few minutes.
  9. The basmati rice can now be added along with 2 cups of water.
  10. Pressure cook the biryani for 2 whistles.
  11. Garnish with fried cashewnuts and chopped coriander leaves.
  12. Serve vegetable biryani hot with raita.
