Lauki ki sabzi is bottle gourd dry curry. Lauki kofta is one of my favorite dishes. But preparing it is a bit time consuming and so I make it only occasionally.
For an everyday comfort food, I love this simple lauki sabzi.
And not to forget the health benefits of this humble vegetable.
Lauki, also called as doodhi or ghiya is rich in fiber, protein and iron. Also, as it is low in calories, you could incorporate this vegetable in your low-calorie diet.

An easy bottle gourd dry curry recipe.
Ingredients
- 2 cups chopped bottle gourd / lauki
- 1 onion, medium-sized
- 1 tomato, medium-sized
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 tsp cumin seeds
- Salt to taste
Instructions
- Peel the skin of lauki and discard the seeds. Chop lauki into small pieces.
- Chop onions and tomatoes finely.
- Heat 1 tbsp oil in a pressure cooker. Add cumin seeds.
- Once cumin seeds crackle, add chopped onion.
- Saute till onions turn light brown.
- Now add chopped tomatoes along with salt, turmeric powder, red chilli powder and coriander powder. Fry till tomatoes get mashed.
- Add 1/4 cup water and mix well.
- Pressure cook for 2 whistles. Once the pressure gets released by itself, open the lid of the cooker.
- Add garam masala powder and mix the curry.
- Cook till all the water dries up and remove from stove.
- Lauki ki sabzi is ready to be served hot with chapatis or rice.
