Vegetable Sevai

Sevai is a popular breakfast or light-snack dish in South India. It is nothing but rice noodles. It can be prepared at home fresh or you get the instant rice sevai packs available at grocery stores. I have used the store-bought one which is an easier option :).

The most common flavors that sevai is served with is the coconut sevai, lemon sevai or tamarind sevai.

But here I have prepared one with the addition of vegetables and tomatoes. Do try this quick and easy vegetable sevai recipe.

rice noodles with vegetables and spices.

Ingredients

  • 3 cups instant rice sevai
  • 1 onion
  • 2 tomatoes
  • 1/2 cup chopped vegetables ( beans, carrot, peas )
  • 1 or 2 green chillies
  • 1 inch piece ginger
  • 1/2 tsp mustard seeds
  • 1/2 tsp chana da
  • A pinch of asafoetida
  • 1/2 tsp urad dal
  • A few curry leaves
  • 1/4 tsp garam masala powder
  • 1/4 tsp turmeric powder
  • A few coriander leaves
  • Salt to taste

Instructions

  1. Prepare the sevai as per the instruction on the instant rice sevai pack.
  2. Boil the chopped vegetables and keep aside.
  3. Chop the onions, tomatoes and ginger.
  4. Slit the green chilli.
  5. In a pan, heat 1 tbsp oil. Add mustard seeds and asafoetida. When they crackle, add chana dal and urad dal.
  6. Once the dal turns brown, add the chopped onions, ginger and curry leaves.
  7. Fry till the onions turn soft.
  8. Now add the chopped tomatoes along with turmeric powder, salt and garam masala powder.
  9. Fry till the tomatoes turn soft and mashed well.
  10. Add the boiled vegetables along with cooked sevai and fry for a few minutes.
  11. Garnish with coriander leaves and serve vegetable sevai hot.

    my dad use to make this for us on weekends, but i was not a big fan of this back then, as my mind was set that vermicelli is made only to eat in a sweet form:)..but after marriage when i started cooking on my own, i discovered it can be made as upma and it tastes delicious..love your clicks too
