Shimla Mirch Aloo Sabzi / Capsicum Potato Curry

Shimla mirch aloo sabzi is a simple North Indian dry curry recipe. If you are looking for a quick side dish to make, then this recipe is the one to try. Bell peppers and potatoes are a good combination. This curry can be served with rotis or rice.

Shimla Mirch Aloo Sabzi – Capsicum Potato Curry recipe

An easy side dish recipe of capsicums and potatoes.

Ingredients

  • 3 capsicums
  • 1 big potato
  • 1 onion
  • 3 cloves of garlic
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala powder
  • A few coriander leaves
  • Salt to taste

Instructions

  1. Dice the onion, capsicums and potato.
  2. Heat 1 tbsp oil in a pan. Add mustard seeds and cumin seeds.
  3. When the mustard crackles, add diced onions and chopped garlic and saute.
  4. Add the diced capsicums and fry for a few minutes.
  5. Now add the diced potatoes along with salt, turmeric powder, red chilli powder and garam masala powder.
  6. Saute for a few minutes and add enough water to cook the vegetables.
  7. Cover and cook potatoes turn soft.
  8. Garnish with coriander leaves and serve hot with rotis or rice.
