I have used arai keerai for this recipe. You could use siru keerai or mulai keerai too. Healthy greens combined with dal, make this a wholesome lunch menu.
A traditional lunch menu of South India is incomplete without sambar and usually sambar is prepared using a variety of vegetables, okra sambar being one such. Greens are used in the preparation of keerai sambar.

A healthy South Indian lentils and greens gravy recipe.
Ingredients
- 1 bunch greens / keerai
- 1/2 cup toor dal / thuvaram paruppu / split pigeon pea
- 1 onion medium-sized
- 1 tomato
- 2 green chillies
- lemon-sized tamarind
- 1 tbsp sambar powder
- 1/4 tsp turmeric powder
- 1 tsp mustard seeds
- 1 tsp broken urad dal / ulutham paruppu
- 1/4 tsp fenugreek seeds / methi
- A pinch of asafoetida
- A few curry leaves
- Salt to taste
Instructions
- Wash greens thoroughly and chop them finely.
- Slice onions lengthwise. Chop tomatoes finely. Slit green chillies lengthwise.
- Soak tamarind in 2 cups water. Extract tamarind juice and keep aside.
- Pressure cook toor dal along with turmeric powder in enough water, till it turns soft.
- Heat oil in a pan. Add mustard seeds and when they splutter, add urad dal, fenugreek seeds and asafoetida.
- When dal turns brown, add sliced onions, curry leaves and green chillies.
- Saute till the onions turn translucent.
- Then add chopped tomatoes and fry till they are mashed.
- Now add the chopped greens and fry for a minute.
- Add tamarind extract, salt, sambar powder and mix well.
- Cook in medium flame till the greens gets cooked.
- Then add the cooked toor dal and mix well. Let this cook for 2-3 minutes.
- Keerai sambar is ready to be served hot with rice.
