Instant Sooji Dhokla | Semolina Dhokla

Dhokla is a snack from the state of Gujarat in India. It is usually made with rice or chickpea flour/besan that is left to ferment in yoghurt overnight.

This dhokla recipe, made from sooji/semolina is an instant recipe and can be prepared in a jiffy.

You can have it for breakfast or as a snack.
This is a very simple and easy recipe.

a quick and easy instant dhokla recipe using semolina.

Ingredients

  • 1 cup sooji ( semolina / rava )
  • 1 cup thick ( curd / yogurt / dahi )
  • 3/4 cup water
  • 1 green chilli ( chopped )
  • 1 tsp eno fruit salt
  • 1/4 tsp salt
  • 1 tsp lemon juice
  • 1 tsp grated ginger
  • A few coriander leaves

Instructions

  1. Roast the sooji without adding any oil till the raw smell goes.
  2. Mix the sooji with yogurt and water.
  3. Add the chopped green chillies, chopped coriander leaves, salt, 1 tsp oil, lemon juice and grated ginger. Mix well and let this mixture rest for around half-hour.
  4. Grease a plate with oil.
  5. Add 1 tsp eno fruit salt to the batter and mix well.
  6. Make sure that you immediately pour this batter into the greased plate.
  7. Steam in a pressure cooker or in a steamer for about 10-15 mins till done.
  8. Cool the dhoklas and cut into squares.
  9. Now for the tadka, heat oil in a pan. Add mustard seeds and once they crackle, add the green chillies and fry for a few minutes.
  10. Pour this tadka over the dhoklas.
  11. Garnish with coriander leaves. Instant sooji dhoklas are ready to be served.
