Dhokla is a snack from the state of Gujarat in India. It is usually made with rice or chickpea flour/besan that is left to ferment in yoghurt overnight.
This dhokla recipe, made from sooji/semolina is an instant recipe and can be prepared in a jiffy.
You can have it for breakfast or as a snack.

a quick and easy instant dhokla recipe using semolina.
Ingredients
- 1 cup sooji ( semolina / rava )
- 1 cup thick ( curd / yogurt / dahi )
- 3/4 cup water
- 1 green chilli ( chopped )
- 1 tsp eno fruit salt
- 1/4 tsp salt
- 1 tsp lemon juice
- 1 tsp grated ginger
- A few coriander leaves
Instructions
- Roast the sooji without adding any oil till the raw smell goes.
- Mix the sooji with yogurt and water.
- Add the chopped green chillies, chopped coriander leaves, salt, 1 tsp oil, lemon juice and grated ginger. Mix well and let this mixture rest for around half-hour.
- Grease a plate with oil.
- Add 1 tsp eno fruit salt to the batter and mix well.
- Make sure that you immediately pour this batter into the greased plate.
- Steam in a pressure cooker or in a steamer for about 10-15 mins till done.
- Cool the dhoklas and cut into squares.
- Now for the tadka, heat oil in a pan. Add mustard seeds and once they crackle, add the green chillies and fry for a few minutes.
- Pour this tadka over the dhoklas.
- Garnish with coriander leaves. Instant sooji dhoklas are ready to be served.
