Maharashtrian kadhi recipe is a Maharashtrian style lightly spiced yogurt gravy. Kadhi is a spiced yogurt based gravy, thickened with chickpea flour.

There are so many variations of kadhi, differing in taste, from different regions of India. One of the most popular version of them is kadhi pakora, with deep-fried chickpea flour dumplings in yogurt gravy.

This kadhi recipe is a simple one that can be prepared in a few minutes. Kadhi with steamed rice..yumm!

A lightly spiced Maharashtrian style yogurt gravy that goes well with chapathis or rice.

Ingredients

  • 3 cups yogurt ( dahi / curd )
  • 3 tbsp besan ( gram flour / chickpea flour )
  • 1 tsp garlic paste
  • 3 green chillies, slit
  • 1.5 tsp ginger paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • Coriander leaves for garnishing
  • Salt to taste

Instructions

  1. Take yogurt in a bowl. Add besan and whisk well till there are no lumps.
  2. Add 2 cups of water, turmeric powder and salt. Mix well and keep aside.
  3. Heat 2 tsp oil in a pan. Add mustard seeds.
  4. When mustard seeds splutter, add garlic paste, ginger paste, green chillies and curry leaves.
  5. Saute for a minute on low flame and then add the yogurt mixture.
  6. Keep stirring continuously on medium heat, till the kadhi comes to a boil.
  7. Then let it cook till the gravy thickens little and reaches desired consistency.
  8. Remove from heat and garnish with chopped coriander leaves.
  9. Maharashtrian kadhi is now ready to be served hot with rice.
