A lightly spiced Maharashtrian style yogurt gravy that goes well with chapathis or rice.
Ingredients
- 3 cups yogurt ( dahi / curd )
- 3 tbsp besan ( gram flour / chickpea flour )
- 1 tsp garlic paste
- 3 green chillies, slit
- 1.5 tsp ginger paste
- 1/2 tsp turmeric powder
- 1/2 tsp mustard seeds
- A few curry leaves
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Take yogurt in a bowl. Add besan and whisk well till there are no lumps.
- Add 2 cups of water, turmeric powder and salt. Mix well and keep aside.
- Heat 2 tsp oil in a pan. Add mustard seeds.
- When mustard seeds splutter, add garlic paste, ginger paste, green chillies and curry leaves.
- Saute for a minute on low flame and then add the yogurt mixture.
- Keep stirring continuously on medium heat, till the kadhi comes to a boil.
- Then let it cook till the gravy thickens little and reaches desired consistency.
- Remove from heat and garnish with chopped coriander leaves.
- Maharashtrian kadhi is now ready to be served hot with rice.
