Arbi Roast | Taro Root Roast

Arbi roast recipe – a simple and tasty taro root / colocasia roast recipe. This delicious arbi roast or seppankizhangu roast has just a few everyday Indian spices added to it.

Arbi is a commonly used vegetable in Indian cuisine and is also one of the versatile vegetables as they can be steamed, baked or fried.

While potato roast recipe is one of my favorite recipes that I make often, I like this tasty arbi roast where arbi is slow roasted in a pan along with spices.

Arbi is a starchy root vegetable and I use it as a substitute for potatoes. But unlike potatoes the skin of taro root is non edible and needs to be removed before cooking it. Called as seppankizhangu in Tamil, a delicious combination of this taro root vegetable roast with rice and sambar or rasam or mor kuzhambu is perfect for a lunch menu or this roast can be had with rotis / chapatis. Lets see how to make easy arbi roast.

How to make Arbi Roast step by step

  1. Pressure cook the arbi, remove the skin and cut each arbi into 2 to 3 thick slices.
  2. Heat oil in a pan. Add the arbi slices. Add the spice powders – turmeric powder, chilli powder and coriander powder along with salt. Mix well. On a slow flame fry the arbi slices till they are roasted well. Keep stirring occasionally.

  3. Finally sprinkle garam masala powder. Mix well and cook for a minute. Remove from heat. Arbi roast is ready to be served.

Seppankizhangu Roast | Arbi Roast Taro Root Roast

Arbi Roast – Taro Root Roast recipe

Ingredients

  • 10-12 arbi ( seppankizhangu / taro root )
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala powder
  • Salt to taste
  • 3 tbsp oil

Instructions

  1. Wash the arbi and pressure cook it in enough water for 2 whistles or till it turns soft.
  2. Once the pressure from the cooker is released, drain off the water. Transfer to a bowl of cold water. Peel off the skin and cut each arbi into 2-3 thick round slices.
  3. Heat oil in a non-stick pan. Add the arbi slices.
  4. Add salt, turmeric powder, red chilli powder and coriander powder and mix well.
  5. Reduce the flame to low and stir the arbi gently at intervals till they are roasted well.
  6. Finally add garam masala powder, mix well and cook for a minute.
  7. Remove from heat. Arbi roast is ready to be served as side dish for rice or rotis.

Notes

  • Make sure to cook the arbi in pressure cooker till it turns soft. At the same time don’t overcook it else it will turn mushy.
  • Don’t cut the arbi slices too thin. They should be slightly thick.
