Aloo Shimla Mirch Curry | Potato Capsicum Curry

Aloo shimla mirch curry is a mildly spiced tomato based curry of potatoes and bell pepper. It is a simple recipe that is a good side dish for chapatis. It goes well with pulao also.

Potatoes and capsicum make for a tasty combination in this curry.

This curry uses only simple ingredients but the taste is absolutely delicious.

A mildly spiced curry of potatoes and bell pepper in a tomato based gravy.

Ingredients

  • 3 potatoes ( aloo )
  • 2 green capsicums ( bell peppers or shimla mirch )
  • 1 large onion
  • 3 medium tomatoes
  • 4 cloves of garlic
  • 1/2 tsp chopped ginger
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1 tbsp coriander powder
  • 1/4 tsp garam masala powder
  • A few coriander leaves
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Chop onion, ginger and garlic. Chop capsicums into big pieces.
  2. Blend the tomatoes into a paste.
  3. Pressure cook or boil the potatoes until soft. Chop them into big cubes.
  4. Heat oil in a pan. Add chopped onions, ginger and garlic.
  5. Saute till the onions turn golden brown.
  6. Now add the chopped capsicums and fry for 2-3 minutes. Remove and keep aside.
  7. In the same pan, add tomato paste and fry till the raw smell goes.
  8. Add in salt, turmeric powder, red chilli powder, coriander powder and cumin powder and fry for a minute.
  9. Add boiled potatoes and the fried capsicum along with a cup of water.
  10. Let the gravy boil to the desired consistency.
  11. Finally add garam masala powder just before removing from heat.
  12. Garnish with chopped coriander leaves.
  13. Serve aloo shimla mirch curry hot with rotis or naan or any Indian flat bread.

    This recipe was great and I’ve been asked to add it to our regular meal plan. Everything just fell together perfectly even though I substituted a couple of ingredients with what I had on hand. Thanks so much for putting it out there for me to try.
