Thayir sevai recipe is rice noodles / rice sticks flavored with seasoned yogurt. Sevai is a popular South Indian dish that is usually served for breakfast or dinner.
Traditionally sevai is prepared at home, but in this fast-paced world, you get instant sevai that you can easily grab from a store.
While vegetable sevai is on the spicier side and coconut sevai is on the mildly spicy side, curd sevai is totally soothing.
I have used instant sevai for this recipe. You could use home made sevai also. Do try this simple, light breakfast recipe.

Thayir Sevai – rice noodles in seasoned creamy yogurt.
Ingredients
- 1 cup cooked sevai / rice noodles
- 2 cups curd
- 2 tbsp grated carrot
- 2 green chillies chopped
- 1/2 tsp grated ginger
- 1/2 tsp mustard seeds
- A few curry leaves
- A pinch of asafoetida
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Prepare rice sevai as per the instructions on the pack.
- Heat 2 tsp oil in a pan. Add mustard seeds and when they splutter, add asafoetida, grated ginger, chopped green chillies and curry leaves.
- Saute for a few seconds.
- Then add grated carrots and stir fry for a couple of seconds.
- Add this seasoning to the curd.
- Mix the cooked sevai with the seasoned curd along with salt.
- Garnish with chopped coriander leaves.
