Ingredients
- 1.5 cups pasta
- 1/2 cup chopped spinach leaves
- 3 tomatoes, medium-sized
- 1 tsp oregano
- 2 cloves of garlic
- 1/2 tsp black pepper powder
- 1/4 tsp sugar
- 1 tbsp + 1 tsp oil
- Salt to taste
Instructions
- Boil water in a large pot along with salt and 1 tsp of oil.
- Once water starts boiling, add the pasta and cook till the pasta becomes tender.
- Drain the water and set aside the pasta.
- Heat 1 tbsp oil or butter in a pan.
- Add chopped garlic and saute till they turn brown.
- Add the chopped spinach and little water and cook the spinach.
- When spinach is cooked, add chopped tomatoes along with salt.
- Fry till the tomatoes become soft and mashed.
- Add oregano and black pepper powder.
- Finally add the cooked pasta and stir fry for a minute till the pasta is mixed well with the prepared sauce.
- Serve tomato spinach pasta with toasted bread and enjoy!
