Cooking Term – En papillote

En papillote is a French cooking method which in French refers to ‘ in parchment ‘. The food is wrapped in a parchment paper and baked. The food steams itself or by use of any moisture source like wine, stock or water can be used. The result of this cooking method is perfectly cooked and tender food. The food doesn’t dry out as the food is getting steamed within the packet. You need to ensure that the pouch is carefully folded and sealed.

You could cook any meat or vegetables using this method or a combination of both vegetables and meat. The herbs or wine that you add will lend their aromatic flavor to the food as it cooks. The most common food that is cooked using this method is fish.
