Beerakaya tomato kura is a simple ridge gourd and tomato curry. This Andhra dish is easy to make and tastes good with either rotis or rice.
Ridge gourd / peerkangai / turai is low in saturated fat and cholesterol. They are high in Vitamin C, dietary fibre, magnesium and iron. They have a high water content which makes them a low calorie vegetable.

Andhra style ridge gourd tomato curry.
Ingredients
- 2 ridge gourds ( beerakaya / peerkangai )
- 1 onion
- 2 tomatoes
- 2 green chillies
- 3 cloves of garlic
- 1/2 tsp mustard seeds
- 7 – 8 methi seeds / fenugreek seeds
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp coriander powder
- A few curry leaves
- Salt to taste
Instructions
- Peel the skin of the ridge gourds and chop them into small pieces.
- Chop onion, garlic and tomatoes. Slit green chillies.
- In a pan heat oil. Add mustard seeds and when they splutter, add methi seeds.
- Make sure that you dont burn the seeds.
- Add curry leaves and garlic.
- Once the garlic turns brown, add chopped onions and saute till they turn translucent.
- Now add the chopped tomatoes. Fry till the tomatoes are mashed.
- Add salt, turmeric powder, red chilli powder and coriander powder and fry for a few minutes.
- Then add in the chopped ridge gourd along with around 1/2 cup water.
- Let this cook till the curry is of the desired consistency.
- Serve hot with rice or rotis / chapathis.
