Beerakaya Tomato Kura | Ridge Gourd Tomato Curry

Beerakaya tomato kura is a simple ridge gourd and tomato curry. This Andhra dish is easy to make and tastes good with either rotis or rice.

Ridge gourd / peerkangai / turai is low in saturated fat and cholesterol. They are high in Vitamin C, dietary fibre, magnesium and iron. They have a high water content which makes them a low calorie vegetable.

Beerakaya Tomato Kura recipe

Andhra style ridge gourd tomato curry.

Ingredients

  • 2 ridge gourds ( beerakaya / peerkangai )
  • 1 onion
  • 2 tomatoes
  • 2 green chillies
  • 3 cloves of garlic
  • 1/2 tsp mustard seeds
  • 7 – 8 methi seeds / fenugreek seeds
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp coriander powder
  • A few curry leaves
  • Salt to taste

Instructions

  1. Peel the skin of the ridge gourds and chop them into small pieces.
  2. Chop onion, garlic and tomatoes. Slit green chillies.
  3. In a pan heat oil. Add mustard seeds and when they splutter, add methi seeds.
  4. Make sure that you dont burn the seeds.
  5. Add curry leaves and garlic.
  6. Once the garlic turns brown, add chopped onions and saute till they turn translucent.
  7. Now add the chopped tomatoes. Fry till the tomatoes are mashed.
  8. Add salt, turmeric powder, red chilli powder and coriander powder and fry for a few minutes.
  9. Then add in the chopped ridge gourd along with around 1/2 cup water.
  10. Let this cook till the curry is of the desired consistency.
  11. Serve hot with rice or rotis / chapathis.
