Dahi baigana / dahi baingan – an Oriya dish of fried eggplants in a yogurt gravy. The state Orissa, officially called Odisha, is located on the east coast of India.
This dish is popular in Orissa and is very simple and easy to prepare. Beaten curd is mixed with spiced seasoning and fried brinjals and the result is a yummy dish.
This simple dish goes well with rotis, parathas or even with rice.

Fried eggplants in a yogurt based gravy.
Ingredients
- 4-5 baby brinjals ( eggplants / baingan )
- 1 1/2 cups ( curd / yogurt )
- 2 green chillies
- 1 tsp chopped ginger
- 1/2 tsp mustard seeds
- 1/4 tsp fennel seeds ( saunf )
- 1/2 tsp cumin seeds ( jeera )
- A pinch of fenugreek seeds ( methi )
- 1/4 tsp turmeric powder
- A few curry leaves
- A pinch of sugar
- Salt to taste
Instructions
- Chop brinjals lengthwise and then into halves.
- Heat 2 tbsp oil in a pan. Add the brinjals along with salt and turmeric powder.
- Let this cook on medium heat till the brinjals turn soft.
- Meanwhile beat the yogurt with salt and sugar.
- Add the cooked brinjals to the yogurt and mix well.
- Heat 2 tsp oil in a pan. Add mustard seeds.
- When mustard seeds splutter, add cumin seeds, fennel seeds and methi seeds.
- Then add the slit green chillies, curry leaves and chopped ginger and stir fry for a few seconds.
- Switch off the stove and add the seasoning to the brinjal and yogurt mixture.
- Dahi baigana is ready to be served.
Notes
- You can substitute baby brinjals with a long purple eggplant and cut it into 2 inch pieces.
