Egg curry is a simple curry of boiled eggs cooked in a tomato gravy with a blend of spices. This egg curry could be served with rice or rotis.

A South Indian style simple egg curry recipe.

Ingredients

  • 4 eggs
  • 2 medium-sized onions
  • 2 tomatoes
  • 4 cloves of garlic
  • 1 inch piece ginger
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tbsp coriander powder
  • A few coriander leaves
  • A few curry leaves
  • Salt to taste

Instructions

  1. Grind the onion, ginger, garlic and curry leaves into a paste.
  2. Boil the eggs, remove the shells and cut the eggs into halves.
  3. Grind tomatoes and coriander leaves into a paste.
  4. Heat 1 tbsp oil oil in a pan. Add onion paste and fry till it turns golden brown.
  5. Then add the tomato paste along with salt, turmeric powder, red chilli powder and coriander powder.
  6. Fry till the raw smell of the tomatoes goes.
  7. Add a cup of water and bring the gravy to a boil.
  8. Finally add the boiled egg halves and cook for a few minutes till the gravy is of required consistency.
  9. Garnish with chopped coriander leaves and egg curry is ready to be served.
