Soya chunks tomato curry is soya chunks / soya nuggets in a tomato based gravy. A great meat substitute, soya is rich in proteins.

This dish is a simple flavorful curry with soya absorbing all the flavors. You can have this yummy soya chunks curry as a side dish for rotis or pulao.

I have used mini soya chunks here. Lets move on to the recipe for easy soya chunks tomato curry.

Soya Chunks Tomato Curry recipe

A simple soya chunks curry in a tomato based gravy.

Ingredients

  • 1 cup soya chunks / nuggets
  • 1 onion, medium-sized
  • 3 tomatoes, medium-sized
  • 1 tsp ginger paste
  • 4 garlic cloves
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • A pinch of sugar
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala powder
  • 1/4 tsp turmeric powder
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Bring water to a boil in a pot. Switch off the flame. Add the soya chunks.
  2. Cover it and let the soya chunks soak in the hot water for around 1/2 hour.
  3. Drain the water. Squeeze out water from the soya chunks, using your hands, and keep it aside.
  4. Chop onion, garlic and tomatoes.
  5. Heat 1 tbsp oil in a pan. Add chopped onions and garlic.
  6. Saute till onions turns golden brown.
  7. Then add chopped tomatoes and fry till raw smell of tomatoes goes and they get mashed well.
  8. Remove from flame and let this mixture cool down.
  9. Grind it to a paste and keep aside.
  10. Heat 2 tsp oil in a pan. Add ginger paste and fry till it turns brown.
  11. Squeeze the water from the soya nuggets and added them to the pan.
  12. Fry for 2-3 minutes.
  13. Now add the ground tomato paste.
  14. Add salt, turmeric powder, red chilli powder, cumin powder and coriander powder.
  15. Mix well and add 1/2 cup water.
  16. Let this cook uncovered for 7-9 minutes.
  17. Once the gravy reaches desired consistency, remove from heat.
  18. Soya chunks tomato curry is now ready to be served with rotis, phulkas, chapatis, pulao or jeera rice.
