This dish is a simple flavorful curry with soya absorbing all the flavors. You can have this yummy soya chunks curry as a side dish for rotis or pulao.

A simple soya chunks curry in a tomato based gravy.
Ingredients
- 1 cup soya chunks / nuggets
- 1 onion, medium-sized
- 3 tomatoes, medium-sized
- 1 tsp ginger paste
- 4 garlic cloves
- 1 tsp cumin powder
- 1 tsp coriander powder
- A pinch of sugar
- 1/2 tsp red chilli powder
- 1 tsp garam masala powder
- 1/4 tsp turmeric powder
- 1 tbsp oil
- Salt to taste
Instructions
- Bring water to a boil in a pot. Switch off the flame. Add the soya chunks.
- Cover it and let the soya chunks soak in the hot water for around 1/2 hour.
- Drain the water. Squeeze out water from the soya chunks, using your hands, and keep it aside.
- Chop onion, garlic and tomatoes.
- Heat 1 tbsp oil in a pan. Add chopped onions and garlic.
- Saute till onions turns golden brown.
- Then add chopped tomatoes and fry till raw smell of tomatoes goes and they get mashed well.
- Remove from flame and let this mixture cool down.
- Grind it to a paste and keep aside.
- Heat 2 tsp oil in a pan. Add ginger paste and fry till it turns brown.
- Squeeze the water from the soya nuggets and added them to the pan.
- Fry for 2-3 minutes.
- Now add the ground tomato paste.
- Add salt, turmeric powder, red chilli powder, cumin powder and coriander powder.
- Mix well and add 1/2 cup water.
- Let this cook uncovered for 7-9 minutes.
- Once the gravy reaches desired consistency, remove from heat.
- Soya chunks tomato curry is now ready to be served with rotis, phulkas, chapatis, pulao or jeera rice.
