I had some leftover deep fried masala vadas available. So I decided upon this vada curry recipe.
It is a gravy recipe and goes well with tiffin items like dosa or idlis. Vadai curry is a popular recipe in Indian state of Tamil Nadu. Instead of the deep-fried vadas, you could steam the vadas and use it in the recipe for a healthier version.
Vada Curry Recipe
Ingredients
- 6-7 masala vadas
- 2 medium-sized onions
- 3 tomatoes
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp coriander powder
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds /saunf / sombu
- 1 inch piece cinnamon
- 2 cloves
- A few curry leaves
- Salt to taste
Method
- Prepare the masala vadas.
- Chop onions and tomatoes.
- Heat oil in a pan. Add cloves and cinnamon.
- Add mustard seeds. When they crackle, add cumin seeds and fennel seeds.
- When cumin turns brown, add curry leaves followed by the chopped onions.
- Saute till onions turn translucent.
- Then add chopped tomatoes and fry for 2 minutes
- Add salt, turmeric powder, red chilli powder and coriander powder.
- Fry till the tomatoes get mashed.
- Cut the masala vadas into pieces and add to the gravy along with some water.
- Cook till you get the desired consistency of the gravy and remove from heat.
- Serve vada curry with dosa or idli or as a side dish for rice.
