Vegetable kurma is an easy to prepare mixed vegetables gravy dish that is lightly spiced and aromatic. This coconut based gravy with spices is delicious.
Vegetable kurma goes well with pulao, chapati, dosa or puris.

a delicious curry recipe using mixed vegetables and flavored with coconut and Indian spices.
Ingredients
- 1 onion
- 1 tomato
- 1/4 cup chopped French beans
- 1 carrot
- 1 large potato
- 3 garlic cloves
- 1 tsp ginger paste
- 3 tbsp grated coconut
- 5 – 6 cashew nuts
- 1 tsp cumin seeds
- 1 tsp aniseed
- 3 green chillies
- 1/4 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 2 cloves
- 1 inch piece cinnamon
- 2 star anise
- Salt to taste
Instructions
- Chop onion, tomato, French beans, carrot, potato, garlic. Slit green chillies.
- Grind coconut, green chillies, cashew nuts, cumin seeds and aniseed into a coarse paste and keep aside.
- In a pan, heat 1 tbsp oil. Add whole garam masala – cinnamon, cloves and star anise.
- Add chopped onions, ginger paste, garlic and green chillies and fry till the onions turn translucent.
- Now add the chopped tomatoes and saute for a few minutes.
- Add the ground paste along with turmeric power, salt, coriander powder and garam masala powder.
- Fry for a few minutes. Add the chopped vegetables and enough water to just cover the vegetables.
- Cook this till the vegetables are done.
- Alternately, you could pressure cook this for 2 whistles.
- Serve vegetable kurma hot with rotis / chapatis / rice / dosa.
