a quick and easy egg fry with spices.
Ingredients
- 3 eggs
- 1 onion
- 2 green chillies
- 1 tsp chopped ginger
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 2 tsp coriander powder
- A few curry leaves
- 1/2 tsp mustard seeds
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Boil the eggs and remove the eggs shells.
- Slit the eggs into halves.
- Slice onion. Slit green chillies lengthwise.
- Heat oil in a pan. Add mustard seeds.
- When the mustard seeds splutter, add sliced onions, green chillies, ginger and curry leaves.
- Saute till the onions turn brown.
- Now add salt, turmeric powder, red chilli powder and coriander powder and stir it.
- Sprinkle little water and let this cook for a minute.
- Finally add the cooked eggs and stir gently.
- Garnish with chopped coriander leaves.
