This is a simple and quick boiled egg fry recipe where boiled egg halves are tossed with Indian spices. It can be served as a side dish for rice or can be served with rotis.

Easy Boiled Egg Fry Recipe

a quick and easy egg fry with spices.

Ingredients

  • 3 eggs
  • 1 onion
  • 2 green chillies
  • 1 tsp chopped ginger
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 2 tsp coriander powder
  • A few curry leaves
  • 1/2 tsp mustard seeds
  • Coriander leaves for garnishing
  • Salt to taste

Instructions

  1. Boil the eggs and remove the eggs shells.
  2. Slit the eggs into halves.
  3. Slice onion. Slit green chillies lengthwise.
  4. Heat oil in a pan. Add mustard seeds.
  5. When the mustard seeds splutter, add sliced onions, green chillies, ginger and curry leaves.
  6. Saute till the onions turn brown.
  7. Now add salt, turmeric powder, red chilli powder and coriander powder and stir it.
  8. Sprinkle little water and let this cook for a minute.
  9. Finally add the cooked eggs and stir gently.
  10. Garnish with chopped coriander leaves.
