Moong Dal Khichdi

Moong dal khichdi is a simple one pot meal recipe of rice and lentils. Khichdi is an Indian comfort food that is wholesome and tasty. It is easy to digest and nutritious.

Rice and dal makes for a healthy combo. I have added a few vegetables to make it even more nutritious. You could serve this one pot healthy meal with curd or raita and pickles.

a healthy one pot meal using rice and lentils.

Ingredients

  • 3/4 cup rice
  • 1/2 cup moong dal ( split yellow lentils / pasi paruppu )
  • 1 onion large
  • 1 tomato large
  • 1/2 cup chopped carrots
  • 1 tsp grated ginger
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp coriander powder
  • 1 tsp cumin seeds ( jeera )
  • A pinch of asafoetida ( hing )
  • Coriander leaves for garnishing
  • 1 tbsp oil or ghee
  • Salt to taste

Instructions

  1. Chop onions, carrots and tomatoes.
  2. Heat oil or ghee in a pressure cooker. Add cumin seeds and asafoetida.
  3. When cumin seeds crackle, add chopped onions and grated ginger.
  4. When onions turn soft, add chopped tomatoes and chopped carrots. Fry for 2 minutes.
  5. Add turmeric powder, red chilli powder, garam masala powder, coriander powder and salt.
  6. Add rice and moong dal along with 3-1/2 cups water.
  7. Pressure cook it for around 3 whistles.
  8. When the pressure is released, garnish khichdi with chopped coriander leaves.
  9. Khichdi is ready to be served hot with raita or plain curd.
