Lemon rice is a tangy South Indian style rice recipe. It is very easy to prepare and makes for a good lunch box recipe. This is one of my favorite rice recipes as it is very easy to prepare and I can have it just like that without any side dish.
Lemons give a tangy flavor to rice while the peanuts give a nice crunch to the dish while the seasoning imparts a lovely flavor to this simple dish.
If you have any left-over rice, you could rustle up this dish in no time. As for nutrition, lemons are an excellent source of Vitamin C.

Ingredients
- 1 cup rice
- 1 1/2 tbsp lemon juice
- 2 tbsp raw peanuts
- 1 green chilli
- 1 inch piece ginger
- 1/2 tsp mustard seeds
- 1 dry red chilli
- 1/2 tsp urad dal / split black lentils (without skin)
- 1/4 tsp turmeric powder
- 1 tsp channa dal / split bengal gram dal
- A few curry leaves
- Salt to taste
- 1 tbsp oil
Instructions
- Wash the rice 3-4 times using water. Then soak the rice in enough water for 15 minutes.
- Cook the rice. Spread the cooked rice on a plate and keep it aside to cool down completely.
- Chop the green chilli into small pieces and finely chop ginger.
- Heat oil in a pan. Add mustard seeds and broken red chilli.
- When mustard seeds splutter, add channa dal, urad dal, peanuts and fry till the dal turns slightly brown.
- Add curry leaves, green chilli and chopped ginger. Fry for a 3-4 seconds. Finally add turmeric powder and stir for a couple of seconds.
- Now remove from heat.
- Once the rice cools down, add the prepared seasoning along with the lemon juice and required amount of salt.
- Mix well and lemon rice is ready to be served.
Notes
- As a variation, you could also add cashews when you are preparing the seasoning.
