A flavorful South indian variety rice using fresh mint leaves.
Ingredients
- 1 1/2 cups rice
- 1/2 bunch mint leaves / pudina
- 1/4 cup chopped coriander leaves
- 1 onion
- 3 cloves of garlic
- 3 green chillies
- 1 inch piece ginger
- 2 cloves
- 2 cardamoms
- 1 inch piece cinnamon
- 1 tsp cumin seeds
- Salt to taste
Instructions
- Cook the rice ensuring that the grains are separate. Let this cool for a few minutes.
- Wash pudina leaves thoroughly.
- Grind them along with chopped coriander leaves, green chillies, ginger and garlic into a fine paste, by adding a little water.
- In a pan, heat oil. Add cloves, cardamom and cinnamon and fry for a minute.
- Add the cumin seeds and when they turn brown, add the chopped onions.
- Saute till the onions turn golden brown.
- Now add the ground paste along with salt and fry till the raw smell goes.
- Switch off the gas and add the cooked rice to this.
- Mix well and serve pudina rice with raita / yogurt. I served it with pomegranate raita.
