a healthy rice pulao recipe using spinach.
Ingredients
- 1 cup rice
- 1 big onion
- 2 cups chopped spinach
- 2 tomatoes
- 1/2 cup chopped carrots
- 1 tsp ginger paste
- 1/4 cup peas
- 1 tsp garlic paste
- 2 green chillies
- 1 tsp cumin seeds
- 1 bay leaf
- 2 green cardamoms
- 1 inch piece cinnamon
- 1 tsp fennel seeds
- 3 cloves
- 1 tsp red chilli powder
- 1 tbsp coriander powder ( dhania powder)
- Salt to taste
- 1 tbsp oil
Instructions
- Wash and soak the rice for about 20 minutes.
- Heat oil in a pressure cooker. Add the whole garam masala – bay leaf, cinnamon, cardamoms and cloves and fry.
- Add cumin seeds and fennel seeds and fry till the cumin seeds turn brown.
- Now add the sliced onions, ginger and garlic paste and saute till the onions turn translucent.
- Add the chopped tomatoes along with salt, red chilli powder and coriander powder.
- Fry till the tomatoes are mashed.
- Add in the chopped spinach, carrots and peas and saute for a few minutes.
- Now add rice along with required amount of and pressure cook it for 2 whistles.
- Palak pulao is ready to be served.
