Paneer pulao is a lightly spiced rice using cottage cheese. The sprinkling of fried cashews add a touch of color and richness to the dish.
This paneer pulao is very easy to make and the cottage cheese gives a richness to the otherwise light pulao.
This is a healthy pulao and makes for a filling meal with a raita or a spicy curry as an accompaniment to it.

Ingredients
- 1/2 cup paneer / cottage cheese cut into cubes
- 1 cup rice
- 1 onion
- 1/2 cup mint leaves
- 2 cloves
- 1 inch cinnamon piece
- 2 cardamoms
- 2 green chillies
- Salt to taste
Instructions
- Slice the onions into long thin slices. Slit the green chillies lengthwise.
- In a pressure cooker, add 1 1/2 tbsp oil. Once the oil becomes heated, add the garam masala – cloves, cinnamon and cardamom.
- Once they become brown, add the sliced onions and fry till golden brown.
- Add the slit green chillies along with the mint leaves.
- Fry for a few minutes. Add the washed rice and salt.
- Cook the rice in the cooker.
- In a separate pan, add oil for shallow frying. Add the paneer cubes and fry till they turn golden brown and remove.
- Also fry the cashewnuts in the same oil till golden brown and remove.
- Once the rice is done, sprinkle fried paneer and cashews on top.
- Serve paneer pulao hot with raita of your choice.
