by Jiya Jesh · Updated on July 15, 2022 Lunch Box recipes| Rice dishes

I had run out of vegetables with only onions, tomatoes and potatoes left in the pantry and was wondering what to prepare for lunch. I could only see the boiled red kidney beans in the fridge.

That is when I decided to prepare this rajma pulao. It is a simple one pot dish.

  4. Add cloves, cardamoms and cinnamon and fry for a few minutes.
  5. Add fennel seeds and when they start changing colour, add chopped onions and ginger-garlic paste.
  6. When the onions turn brown, add chopped mint leaves and slit green chillies and fry for a few seconds.
  7. Add the chopped tomatoes along with salt, turmeric powder, red chilli powder, cumin powder and coriander powder.
  8. Fry till tomatoes become soft. Add the boiled rajma, rice and water and cook.
  9. Once the pressure gets released from the cooker, mix the rice well and garnish with chopped coriander leaves.
  10. Serve rajma pulao hot with raita. I served it with aloo raita.
