an easy one pot meal using rice and flavored with tomatoes and spices.
Ingredients
- 1 cup rice
- 1 onion
- 2 tomatoes
- 1 tsp ginger-garlic paste
- 1/2 tsp fennel seeds
- 1 inch piece cinnamon
- 2 cardamoms
- 2 cloves
- Handful of mint leaves
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/4 tsp cumin powder
- 1/2 tsp garam masala powder
- 1/2 tsp coriander powder
- 1 1/2 tbsp oil
- Salt to taste
Instructions
- Heat oil in a pressure cooker. Add the whole spices – cinnamon, cardamom and cloves and fry for a few minutes.
- Add the fennel seeds and sliced onions and ginger-garlic paste.
- When the onions turn golden brown, add chopped tomatoes and mint leaves.
- Fry for a few minutes and add salt, turmeric powder, cumin powder, red chilli powder, coriander powder and garam masala powder and mix well.
- Now add the rice along with 2 cups of water and pressure cook it.
- Once done, mix well and serve hot with raita.
