Aloo gobi recipe – a simple vegetarian dry curry of cauliflower and potatoes blended with spices is a traditional North Indian recipe.
This delicious dish is very easy to prepare and tastes great with flat Indian breads like rotis, naan, phulkas or chapatis.
Aloo Gobi Sabzi | Potato and Cauliflower Dry Curry Recipe
Ingredients
- 2 cups cauliflower florets
- 2 potatoes medium sized
- 1 onion
- 1 inch piece ginger, chopped
- 1 tsp cumin seeds / jeera
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/4 tsp garam masala powder
- A pinch of asafoetida
- Coriander leaves for garnishing
- Salt to taste
Method
- Chop onion finely. Peel the skin of the potatoes and chop into cubes.
- Place the cauliflower florets in salted hot water and keep it covered for around 10 minutes.
- Drain the water and keep the blanched florets aside.
- Heat oil in a pan. Add cumin seeds and asafoetida. When cumin seeds change color, add chopped onion and ginger.
- Sauté till the onions turn translucent.
- Now add chopped potatoes and stir fry for around 5 minutes.
- Add the cauliflower florets along with salt, turmeric powder and red chilli powder and mix well.
- Add a tbsp of water. Cover and cook over low flame, stirring at regular intervals till the vegetables are cooked.
- Finally add garam masala powder and mix well. Fry for another 2 minutes and remove from heat.
- Garnish with chopped coriander leaves.
- Aloo gobi is ready to be served hot with rotis, phulkas or naan.
