Aloo Matar Dry Sabzi | Potatoes Green Peas Fry

Aloo matar sukhi sabzi is a North Indian dry curry of potatoes and green peas. Potatoes and peas when paired together make for a delightful combination and with the spices added to it, this curry tastes delicious.

Green peas are rich in antioxidants providing Vitamin C and Vitamin E nutrients. Potatoes also are a good source of Vitamin C.

a North Indian style dry curry of potatoes and green peas.

Ingredients

  • 2 medium-sized potatoes
  • 3/4 cup shelled green peas, fresh or frozen
  • 1 inch piece ginger, chopped finely
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • A pinch of asafoetida
  • Coriander leaves for garnishing
  • 1 1/2 tbsp oil
  • Salt to taste

Instructions

  1. Chop potatoes into cubes.
  2. Heat oil in a pan. Add cumin seeds and asafoetida.
  3. When cumin seeds crackle, add chopped ginger and stir fry for a couple of seconds.
  4. Then add chopped potatoes and green peas and sauté for a minutes.
  5. Add salt, turmeric powder, red chilli powder and coriander powder and sauté for 2 minutes.
  6. Add 1/2 cup water, cover and cook on a slow flame, stirring at regular intervals, till the potatoes turn soft.
  7. Once the vegetables are cooked and all the water dries up, sprinkle garam masala powder and mix well.
  8. Garnish with chopped coriander leaves and serve aloo matar sabzi hot with any flat breads.
