Aloo matar sukhi sabzi is a North Indian dry curry of potatoes and green peas. Potatoes and peas when paired together make for a delightful combination and with the spices added to it, this curry tastes delicious.
Green peas are rich in antioxidants providing Vitamin C and Vitamin E nutrients. Potatoes also are a good source of Vitamin C.

Ingredients
- 2 medium-sized potatoes
- 3/4 cup shelled green peas, fresh or frozen
- 1 inch piece ginger, chopped finely
- 1 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 2 tsp coriander powder
- 1/2 tsp garam masala powder
- A pinch of asafoetida
- Coriander leaves for garnishing
- 1 1/2 tbsp oil
- Salt to taste
Instructions
- Chop potatoes into cubes.
- Heat oil in a pan. Add cumin seeds and asafoetida.
- When cumin seeds crackle, add chopped ginger and stir fry for a couple of seconds.
- Then add chopped potatoes and green peas and sauté for a minutes.
- Add salt, turmeric powder, red chilli powder and coriander powder and sauté for 2 minutes.
- Add 1/2 cup water, cover and cook on a slow flame, stirring at regular intervals, till the potatoes turn soft.
- Once the vegetables are cooked and all the water dries up, sprinkle garam masala powder and mix well.
- Garnish with chopped coriander leaves and serve aloo matar sabzi hot with any flat breads.
